Recipe for Turkey Cutlet with Tomatoes, Green Beans and Capers

Here is a quick and easy recipe for a light and filling meal on nights when you don’t have a lot of time. This meal takes minutes to make, and provides a healthy option for a single person or couple.

  • Two thinly sliced turkey cutlets
  • One cup of fresh green beans
  • One cup diced tomato
  • Two tablespoons of capers

Place the green beans in a small steamer pot and place the pot on the stove to cook. While the green beans are cooking, season the turkey cutlets with fresh ground black pepper and salt to taste. Pan-fry the turkey cutlets in two tablespoons extra virgin olive oil until the bottoms are golden brown, then flip and continue to cook them until they’re brown on the other side as well. Place the cutlets on plates and place tomatoes and capers into the frying pan with the remaining oil. Cook until heated thoroughly. Remove the green beans from the steamer and place on top of the cutlets. Pour the tomato and capers mixture over the top and serve.
